What is Carrageenan?
Carrageenan is a family of long-chain polysaccharides extracted from certain species of red seaweed, most commonly harvested in the Philippines and Indonesia. It has been used as a food-gelling agent in traditional cooking for centuries before being refined for industrial use. The commercial product comes in several forms — kappa, iota and lambda — each with slightly different gelling properties.
What does it do in the product?
In food products, carrageenan acts as a thickener, gelling agent and stabiliser, preventing the separation of liquids and solids. It helps give plant-based milks a creamier mouthfeel and keeps cocoa particles evenly suspended in chocolate drinks. In processed meats, it binds water and improves slice cohesion.

Is Carrageenan something to worry about?
Carrageenan is approved for use in food by both the FDA and EFSA, and in its standard (high-molecular-weight) form is generally considered safe at typical dietary exposures. Some animal and cell-based laboratory research has suggested that degraded carrageenan — a lower-molecular-weight form called poligeenan, which is not permitted in food — may promote intestinal inflammation, but that finding has not been consistently replicated in humans at food-grade doses. A minority of gastroenterology researchers have argued that even food-grade carrageenan warrants further study in people with inflammatory bowel conditions, while major regulatory reviews have so far found the evidence insufficient to restrict its use.
Who should pay attention

How is it regulated?
In the United States, the FDA lists food-grade carrageenan as a generally recognised as safe (GRAS) substance and permits it in a wide range of food categories, though its use in organic-labelled products has faced recurring scrutiny from the National Organic Standards Board. In the European Union, it carries the designation E407 and has been re-evaluated by EFSA, which set an acceptable daily intake and concluded that typical consumer exposure does not raise safety concerns; its use in food for infants and young children is more tightly restricted in EU rules than in the US.
How to spot it on a label
On an ingredient list it appears as 'carrageenan', 'E407' or occasionally 'Irish moss extract'. It is usually listed towards the middle or end of the list, indicating a relatively small quantity by weight. If you see 'poligeenan' or 'degraded carrageenan', that is a distinct substance not approved for food use and should not appear on any compliant product label.
What a cleaner swap looks like
Products thickened with guar gum, sunflower lecithin or locust bean gum tend to have a simpler additive profile, though they change texture slightly. For plant-based milks, some brands rely purely on higher nut or oat content plus homogenisation to achieve creaminess without any added hydrocolloid.
