Gum arabic is a dried resin harvested from the bark of Acacia senegal and related acacia trees, grown mainly in the semi-arid Sahel region of Africa. It is a complex mixture of polysaccharides and glycoproteins that dissolves readily in water. Because it comes directly from a plant source with minimal processing, it is widely regarded as one of the oldest food additives in use.

It often appears near other stabilisers or emulsifiers, such as xanthan gum or lecithin, because manufacturers frequently combine them to achieve a specific texture or shelf stability. If the label says 'natural flavour emulsion', gum arabic may be the unnamed carrier even when not listed separately, though disclosure rules vary by jurisdiction.
What a cleaner swap looks like
Gum arabic itself is already considered a low-concern, minimally processed natural ingredient, so it rarely needs to be avoided. Consumers looking for products with shorter ingredient lists might seek out foods that achieve texture through whole-food ingredients like fruit pectin or simply reduced cooking, neither of which requires added gums. If the goal is avoiding all added gums, checking for products labelled 'no added gums or stabilisers' is the most straightforward approach.
