What is Mono- and Diglycerides?
Mono- and diglycerides are partial esters of glycerol combined with one or two fatty acid chains, respectively. They are typically derived from animal fats, vegetable oils such as soybean or palm, or synthesized through a chemical process called glycerolysis. The term 'glycerol monostearate' refers specifically to the stearic-acid-based monoglyceride and indicates the same family of compounds.
