What is Sucralose?
Sucralose is a synthetic sweetener produced by selectively replacing three hydroxyl groups on a sucrose molecule with chlorine atoms. The structural change makes it largely unrecognized by the body's metabolic pathways, so almost none of it is broken down for energy. It was discovered in the late 1970s and reached commercial food use in the 1990s.
What does it do in the product?
Sucralose provides intense sweetness at very small concentrations, allowing manufacturers to cut or eliminate added sugar without changing a product's flavour profile dramatically. Because it does not ferment, it also extends shelf stability in some formulations. Its heat tolerance makes it suitable for baked goods and pasteurized products where other high-intensity sweeteners degrade.

Is Sucralose something to worry about?
Decades of regulatory review in both the US and EU have affirmed sucralose as safe at typical dietary intakes, and it does not contribute to tooth decay or raise blood glucose directly. More recent research has raised questions about possible effects on gut microbiota composition and, in some studies, a modest influence on insulin signalling, though the evidence remains inconsistent and largely based on animal or small human trials. For most adults consuming it occasionally, the public record does not support a high level of concern, but people with gut sensitivities or those consuming it in large daily amounts may wish to monitor their response.

How is it regulated?
The US FDA approved sucralose as a general-purpose sweetener in 1998 following a review of over 100 safety studies, and it carries GRAS status for a wide range of food categories. In the European Union it is authorised as food additive E955 under the additives regulation, with an established acceptable daily intake set by EFSA. Both agencies periodically revisit the evidence as new research emerges.
How to spot it on a label
On US labels sucralose will appear by that name in the ingredient list, sometimes alongside the note 'sweetened with sucralose'. In Europe the label may say 'sweetener: sucralose' or 'sweetener: E955'. Products bearing 'no sugar added' or 'sugar-free' claims that still taste sweet almost always contain sucralose or another high-intensity sweetener, so check the ingredient list directly.
What a cleaner swap looks like
Consumers who prefer to avoid synthetic sweeteners sometimes look for products sweetened with small amounts of real sugar, honey, or maple syrup, accepting a modest calorie increase for a less processed label. Whole-food options such as medjool dates or fruit purees serve a similar role in home baking. If zero-calorie sweetness is a priority, some people choose erythritol or monk fruit extract, though those carry their own emerging research questions.
