The short answer

Enriched flour has five nutrients added back after milling removes them: thiamin, riboflavin, niacin, folic acid, and iron. Some flours also receive added calcium or vitamin D. Enrichment is a public-health measure, not a marketing claim.

Why does white flour lose nutrients in the first place?

A wheat kernel has three layers: the outer bran, the inner germ, and the starchy endosperm in the middle. White flour is made almost entirely from the endosperm, because removing the bran and germ gives flour a finer texture, a longer shelf life, and a milder flavour.
