It partially restores nutritional value but does not replace fiber or every compound lost during refining.

Is modified corn starch the same as genetically modified corn?

'Modified' in this context describes a physical, enzymatic, or chemical treatment applied to the starch to improve its thickening stability or texture—not any change to the corn plant's DNA. Whether the source corn was grown from genetically engineered seed is a separate question not answered by the term 'modified starch' alone.
