Food additives and processing aids are substances manufacturers add during production to change texture, extend shelf life, enhance flavor, or improve how a product looks and handles. Some, like fumaric acid, do their job and largely remain in the final product; others, like benzoyl peroxide used in flour treatment, are mostly consumed during processing but still appear on labels. Regulators require manufacturers to list them so consumers can see exactly what ingredients made it into the package.
Additives typically appear toward the middle or end of an ingredient list, often with a functional descriptor in parentheses—for example, 'magnesium stearate (anticaking agent)' or 'carnauba wax (glazing agent)'. If you spot a chemical-sounding name or a parenthetical role label, you are almost certainly looking at an additive or processing aid. Some, like natural flavors or maltodextrin, are worded to sound simple even though they represent a broader category of compounds.

In most major markets, yes. Regulatory bodies such as the FDA in the United States and EFSA in Europe require evidence of safety before approving a new additive. That said, approval standards and the substances considered acceptable differ by country, which is why an additive permitted in one market may be restricted or banned in another.
Decades of regulatory review by bodies including the FDA have classified MSG as generally recognized as safe. The idea that it causes widespread adverse reactions became popular in the late twentieth century, but controlled studies have not consistently supported it. A small number of people may be sensitive to large quantities, but everyday dietary amounts are not considered a concern for most consumers.
Potassium bromate remains legal as a flour improver in the United States under specific conditions, though it is banned in the European Union, Canada, and several other countries. Regulators in places that still permit it argue that the baking process degrades most of the compound before consumption, but the scientific debate about residual amounts has not been fully resolved.
