What is Monosodium Glutamate (MSG)?
Monosodium glutamate is the sodium salt form of glutamic acid, an amino acid that occurs naturally in foods such as tomatoes, aged cheese, and soy sauce. Commercially, it is produced through bacterial fermentation of starch or sugar, a process that has been standard since the early twentieth century. The white crystalline powder dissolves readily and contributes a distinct savoury depth known as umami.

How to spot it on a label
US regulations require the term 'monosodium glutamate' to appear in full on the ingredient list whenever it is added as a distinct ingredient. However, ingredients such as hydrolysed vegetable protein, yeast extract, and autolysed yeast naturally contain free glutamates and do not trigger the same labelling requirement, so MSG-sensitive consumers should scan for those terms too. The EU label will show 'monosodium glutamate' or 'E621', often followed by the phrase 'contains a source of phenylalanine' only if aspartame is also present — that notice is unrelated to MSG itself.
