What is Fumaric Acid?
Fumaric acid is a simple dicarboxylic acid found naturally in certain plants and fungi, and produced commercially through fermentation or chemical synthesis. It exists in the human body as part of normal cellular energy metabolism. Its powdered form is shelf-stable and slow to dissolve, making it a practical choice for dry food manufacturing.
What does it do in the product?
Fumaric acid lowers the pH of a product, delivering a sharp, tart taste similar to citric acid but at lower concentrations. Seeing it early in the list means it is present at a relatively higher proportion of the product's weight.
What a cleaner swap looks like
If you want to avoid synthetic acidulants, look for products that use naturally fermented ingredients or fruit juice concentrates to supply tartness. For baked goods, homemade versions using cream of tartar and baking soda sidestep the need for fumaric acid entirely.
