What is Sodium Benzoate?
Sodium benzoate is the sodium salt of benzoic acid, a compound found naturally in low levels in certain fruits and spices. Commercially, it is produced by neutralising benzoic acid with sodium hydroxide to yield a fine white powder or granule. It functions most effectively in acidic conditions, which is why it appears predominantly in low-pH foods and drinks.
What does it do in the product?
In acidic environments, sodium benzoate converts partly to benzoic acid, which penetrates microbial cell membranes and disrupts their internal chemistry, preventing the growth of yeasts, moulds, and many bacteria. This extends shelf life without requiring refrigeration in sealed products. At the concentrations permitted by regulators, it can protect a product for months.

Is Sodium Benzoate something to worry about?
The main concern is a chemical reaction between sodium benzoate and ascorbic acid (vitamin C): together they can form small amounts of benzene, a known carcinogen. The reaction is more pronounced at higher temperatures and in the presence of light or certain metals. Separately, some observational research has associated sodium benzoate combined with certain artificial colours with increased hyperactivity in children, prompting regulatory attention in Europe; however, the evidence for sodium benzoate alone remains inconclusive. At approved usage levels in otherwise uncomplicated products, regulatory bodies in the US and EU continue to consider it acceptable for the general population.

Both jurisdictions require it to be declared by name or E-number on the ingredient list.
How to spot it on a label
Look for 'sodium benzoate' or 'E211' in the ingredient list; it typically appears toward the end because it is used at low concentrations. If you also see ascorbic acid, vitamin C, or citric acid listed in the same product, that combination is worth noting given the benzene-formation question. The phrase 'no artificial preservatives' reliably means it is absent.
What a cleaner swap looks like
Products preserved with rosemary extract, mixed tocopherols (vitamin E), or fermented ingredients such as vinegar tend to avoid synthetic benzoate preservatives entirely. Refrigerated or high-pressure-processed beverages and condiments can often achieve shelf stability without any added preservative.
